It is the sweetest day of the week!! Sweet Treat Tuesday!
This week's feature is Peaches and Cream Pie...
Ingredients:
3/4 cup all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 (3 ounce) package non-instant vanilla pudding mix
3 tbsp butter, softened
1 egg
1/2 cup milk
1 (29 ounce) can sliced peaches in heavy syrup, drained and syrup reserved
1 (8 ounce) package cream cheese, softened
1/2 cup white sugar
1 tbsp white sugar
1 tsp cinnamon
Directions:
Preheat oven to 350 degrees and grease sides and bottom of a deep-dish pie pan (10 inch is recommended, but I used a 9 inch without any problems).
Mix together flour, salt, baking powder and pudding mix.
Mix in butter, egg and milk.
Beat for 2 minutes. Pour mixture into pie pan.
Arrange the peach slices on top of the pudding mixture. Set aside.
In a small mixing bowl, beat cream cheese until fluffy. Add 1/2 cup sugar and 3 tbsp reserved peach syrup. Beat for 2 minutes.
Spoon mixture over peaches to within 1 inch of pan edge.
Mix together 1 tbsp sugar and 1 tsp cinnamon and sprinkle over top.
Bake in preheated oven for 30-35 minutes or until golden brown.
Chill before serving.
Hint: Vanilla ice cream is the perfect compliment for this pie!
I wasn't sure at first about the unconventional crust... it is more bread-like than traditional flaky pie crust... but it turned out to be delicious! A perfect dessert to serve in the summer...nice and chilly!

This looks wonderful! I found myself taking inventory of my pantry while reading to see if I had all of the ingredients on hand...added pudding to the shopping list.

Oh my! You said it is more like a bread crust but it sounds like it more of a pancake type crust as it seems it would lighter then bread? Either way I am licking my lips and you are killing my dieting today:)
